Changed slightly from 'Denise in NH' recipe from recipezaar.com. My kids love this in the crockpot, yummy!

Ingredients
3 lbs boneless pork loin
1/2 cup yellow onion (diced)
2 tbsp McCormicks Thick and Zesty Spaghetti Sauce Mix packet
6 oz tomato paste
3 tablespoons red wine vinegar
1 tbsp italian seasoning
2 tsp garlic powder
1 tsp thyme
1 tsp pepper (I use garlic pepper)
1/2 tsp salt (I use garlic sea salt)
1 tsp bay leaves (2 bay leaves)
Directions
  1. Place onions in the bottom of crockpot.

  2. Rub pork loin with salt, pepper, Italian Seasoning, garlic powder, and Thyme.

  3. Place the pork loin on top of the onions in crockpot.

  4. Pour spaghetti sauce over the pork loin making sure to cover the roast.

  5. Pour the red wine vinegar in the spaghetti sauce pan and stir so the vinegar mixes with any sauce left.

  6. Pour the vinegar around the pork loin.

  7. Add the two bay leaf.

  8. Cook at low setting for 8-10 hours, or high for 5 to 6.

  9. Remove pork loin and slice and put the slices back into the sauce in the crockpot.
