Caribbean Black Bean Soup

Makes 8 servings

From Good Housekeeping Favorite Recipes: Vegetarian Meals, one of my favorite go-to cookbooks. If I made it again I would probably just use 1 large jalapeno.

Ingredients
1 pound dry black beans
1 tablespoons canola oil
2 medium red onions, chopped
3 Peppers, Jalapeno, seeded and minced
2 tablespoons minced, peeled fresh ginger
4 garlic cloves, minced
1/2 teaspoon ground allspice
1/2 teaspoon dried thyme
8 cups water
24 oz sweet potatoes (2 medium), peeled and cut into 3/4 inch pieces
1 tablespoon dark brown sugar
2 teaspoons salt
1 cup lightly packed fresh cilantro leaves, chopped
Directions
  1. Soak, or use your favorite method for rehydrating, beans.

  2. In large saucepan heat oil over medium heat, cook onions until tender, then cook with peppers, ginger, garlic, allspice and thyme for 3 minutes longer.

  3. Add beans and water, boil. Reduce heat and simmer for an hour and a half.

  4. Add sweet potatoes, sugar, and salt. Boil again. Reduce heat and simmer for another 30 minutes - until ingredients are tender.

  5. Add in cilantro before serving.
