From Good Housekeeping Favorite Recipes: Vegetarian Meals, one of my favorite go-to cookbooks. If I made it again I would probably just use 1 large jalapeno.

Ingredients

pound dry black beans |
| 1 |
tablespoons canola oil |
| 2 |
medium red onions, chopped |
| 3 |
Peppers, Jalapeno, seeded and minced |
| 2 |
tablespoons minced, peeled fresh ginger |
| 4 |
garlic cloves, minced |
| 1/2 |
teaspoon ground allspice |
| 1/2 |
teaspoon dried thyme |
| 8 |
cups water |
| 24 |
oz sweet potatoes (2 medium), peeled and cut into 3/4 inch pieces |
| 1 |
tablespoon dark brown sugar |
| 2 |
teaspoons salt |
| 1 |
cup lightly packed fresh cilantro leaves, chopped |
Directions
- Soak, or use your favorite method for rehydrating, beans.
- In large saucepan heat oil over medium heat, cook onions until tender, then cook with peppers, ginger, garlic, allspice and thyme for 3 minutes longer.
- Add beans and water, boil. Reduce heat and simmer for an hour and a half.
- Add sweet potatoes, sugar, and salt. Boil again. Reduce heat and simmer for another 30 minutes - until ingredients are tender.
- Add in cilantro before serving.
