Makes 10 servings

Cornbread made with polenta

Ingredients
1 cup flour
1 cup cornmeal (use polenta if available)
3 tsp baking powder
1/2 tsp salt
1/4 cup sugar
1 egg, beaten
1 cup milk, 2%
1/4 cup cooking oil
Directions
  1. Preheat oven and iron skillet to 425 degrees

  2. Melt tablespoon of bacon grease or oil in skillet

  3. mix together all ingredients - batter should be slightly lumpy

  4. pour into oiled iron skillet and bake 20-25 minutes or until brown
