Cornbread made with polenta
|
Ingredients

cup flour |
| 1 |
cup cornmeal (use polenta if available) |
| 3 |
tsp baking powder |
| 1/2 |
tsp salt |
| 1/4 |
cup sugar |
| 1 |
egg, beaten |
| 1 |
cup milk, 2% |
| 1/4 |
cup cooking oil |
Directions
- Preheat oven and iron skillet to 425 degrees
- Melt tablespoon of bacon grease or oil in skillet
- mix together all ingredients - batter should be slightly lumpy
- pour into oiled iron skillet and bake 20-25 minutes or until brown
