Pumpkin cookies
| 15 | oz pumpkin |
| 2 | cup flour |
| 1/2 | cup light brown sugar |
| 1/2 | cup sugar |
| 1 | cup shortening |
| 1 | tsp vanilla |
| 1 | tsp cinnamon |
| 1 | tsp baking powder |
| 1 | tsp baking soda |
| 1 | large egg |
- Preheat oven to 350.
- Cream shortening and sugar.
- Blend in egg, pumpkin, vanilla.
- Blend in dry ingredients.
- Use small ice cream scoop to place dough 2 inches apart on ungreased cookie sheet. Bake 10-12 minutes or until golden brown.
