Chocolate Oat Bread

Makes 12 servings

Mmm, chocolate bread. Not too sweet and quite yummy!

Ingredients
1 T active dry yeast
1/4 c water
1 c whole wheat flour
1.33 c all purpose flour
1/2 c steel cut oats
1/2 t salt
2 T canola oil
1/4 c honey
3 T cocoa powder
1/2 c unsweetened soymilk
Directions
  1. In small bowl, mix yeast with warm water and let sit for 5 minutes.

  2. Mix all dry ingredients (using only 1 C of the all purpose flour) in large bowl.

  3. Add all remaining ingredients and yeast mixture to dry mix and stir with heavy spoon.

  4. When dough stiffens, turn out onto floured surface and add flour while kneading until it is bouncy and not sticky.

  5. Place in oiled pan and cover with a clean dishcloth. Let rise for about an hour.

  6. Punch down, form into desired shape (I like to make individual rolls) and let rise again for about an hour.

  7. Bake at 350 degrees F until not doughy inside.
