Crunchy Nacho Salad

Makes 1 serving

Crunchy, spicy and quick to assemble salad.

Ingredients
1/4 cup quinoa, uncooked
1/4 cup water
14 grams tortilla chips (approx. 5)
5 tbsp salsa
60 grams organic field greens salad mix
Directions
  1. Bring quinoa and water to a boil in a small pot. Turn down to simmer and cook for approximately 15 minutes or until water is absorbed.

  2. Put salad greens in a large bowl and top with quinoa, crumbled tortilla chips, and salsa. Serve.
