Ingredients

cups chicken broth, low fat, no sodium |
| 2 |
cups chicken, meat only |
| 1 |
carrot |
| 1 |
celery stalk |
| 1 |
green pepper |
| 1 |
onion |
| 3 |
cloves garlic |
| 2 |
cups watercress |
| 1 |
cup cilantro |
| 2 |
tsp pepper |
| 1 |
tbsp lime juice |
| 170 |
grams pasta |
Directions
- make stock from leftover chicken carcas
- drain stock into bowl and pick meat from the bones
- skim fat from the stock
- sautee vegetables
- add garlic, herbs (save cilantro for the end)
- add pasta (stars, preferable)
- let simmer for 20 minutes
- when ready to serve, add chopped cilantro and lime
