Watercress Lime Cilantro Chicken Soup

Makes 6 servings

zingy chicken soup

Ingredients
4 cups chicken broth, low fat, no sodium
2 cups chicken, meat only
1 carrot
1 celery stalk
1 green pepper
1 onion
3 cloves garlic
2 cups watercress
1 cup cilantro
2 tsp pepper
1 tbsp lime juice
170 grams pasta
Directions
  1. make stock from leftover chicken carcas

  2. drain stock into bowl and pick meat from the bones

  3. skim fat from the stock

  4. sautee vegetables

  5. add garlic, herbs (save cilantro for the end)

  6. add pasta (stars, preferable)

  7. let simmer for 20 minutes

  8. when ready to serve, add chopped cilantro and lime
