Zesty Chicken Cutlets Recipe

Ingredients
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground cumin
1/4 teaspoon allspice
1 1/2 pounds boneless, skinless chicken breast halves
1 salt to taste
2 teaspoons vegetable oil
Directions
  1. In a small bowl, mix together the chili powder, garlic powder, onion powder, cumin and allspice. Stir well to thoroughly combine.

  2. Cut each breast in half and pound chicken to 1/2 inch thickness. Each serving should be 6 oz.

  3. Sprinkle with salt. Rub with 1/8 teaspoon of seasoning on top side only per piece.

  4. Heat oil in extra deep, 12" nonstick skillet over high heat.

  5. Add pieces, season side down, and cook until lightly browned, about 2 min. Turn, reduce heat to med. high and cook for about 4 min.
