Ingredients

cup canola oil |
| 1 |
lb pumpkin |
| 1 2/3 |
cup sugar |
| 2 |
cups flour |
| 2 |
tsp cinnamon |
| 1 |
tsp baking soda |
| 1 |
tsp baking powder |
| 1/2 |
tsp salt |
| 4 |
oz. light cream cheese |
| 1 |
stick butter |
| 1 |
tsp vanilla |
| 2 |
cups powdered sugar |
Directions
- Grease and flour a 10 x 13 inch cookie sheet.
- Mix together first four ingredients.
- Sift together flour, cinnamon, baking soda, baking powder, and salt. Blend with pumpkin mixture just until smooth. Bake at 350 degrees for 25 - 30 minutes. Let cool before frosting.
- Mix together cream cheese, butter, vanilla, and powdered sugar. Spread on cooled pumpkin squares.
