Chicken vegetable noodle soup

Makes 8 servings

Chicken with carrots, onions, celery, zucchini and noodles

Ingredients
2 tbsp olive oil
1 3/4 lb chicken, dark meat
125 g onion
150 g celery
220 g carrot
350 g zucchini
1 tbsp fresh thyme leaves
5 cup chicken broth
5 cup water
8 oz macaroni elbows
2 tsp salt
1 tsp black pepper
Directions
  1. Salt and pepper the chicken.

  2. Heat oil in soup pot to medium-high heat.

  3. Brown chicken in two batches.

  4. Add onion, celery, carrots, zucchini, thyme, salt and pepper. Cook for a 2 minutes.

  5. Add water and chicken broth. Scrape the bottom of soup pot to deglaze. Bring to a boil and simmer covered for 5 minutes.

  6. Add macaroni, bring to a boil, and cook uncovered for 7 minutes.
