Chicken with carrots, onions, celery, zucchini and noodles

Ingredients

tbsp olive oil |
| 1 3/4 |
lb chicken, dark meat |
| 125 |
g onion |
| 150 |
g celery |
| 220 |
g carrot |
| 350 |
g zucchini |
| 1 |
tbsp fresh thyme leaves |

cup chicken broth |
| 5 |
cup water |
| 8 |
oz macaroni elbows |
| 2 |
tsp salt |
| 1 |
tsp black pepper |
Directions
- Salt and pepper the chicken.
- Heat oil in soup pot to medium-high heat.
- Brown chicken in two batches.
- Add onion, celery, carrots, zucchini, thyme, salt and pepper. Cook for a 2 minutes.
- Add water and chicken broth. Scrape the bottom of soup pot to deglaze. Bring to a boil and simmer covered for 5 minutes.
- Add macaroni, bring to a boil, and cook uncovered for 7 minutes.
