Pumpkin Soup

Ingredients
| 1/4 |
cup sweet green pepper, chopped |
| 1 |
small onion, finely chopped |
| 2 |
cups light & fat free chicken broth 50% less sodium |
| 2 |
cups pumpkin, mashed |
| 2 |
cups skim milk |
| 1/8 |
tsp. thyme |
| 1/4 |
tsp. nutmeg |
| 1 |
tsp. parsley |
Directions
- Combine all ingredients in slow cooker.
- Mix well.
- Cover
- Cook on low 5-6 hours
- During the last hour it may be thicken with 2 Tbsp cornstarch mixed with 1/4 cup cold water but it isn't necessary.
- I made it with the Chicken stock recipe provided by Clairelane. I couldn't find it in the food list so picked the closest. I added no salt and removed all the fat. So, the sodium level showing up in the analyzer is kinda high. Also, I baked my pumpkin instead of boiling it. Don't know if that changes the calories.
