Pumpkin Soup

Pumpkin Soup

Ingredients
1/4 cup sweet green pepper, chopped
1 small onion, finely chopped
2 cups light & fat free chicken broth 50% less sodium
2 cups pumpkin, mashed
2 cups skim milk
1/8 tsp. thyme
1/4 tsp. nutmeg
1 tsp. parsley
Directions
  1. Combine all ingredients in slow cooker.

  2. Mix well.

  3. Cover

  4. Cook on low 5-6 hours

  5. During the last hour it may be thicken with 2 Tbsp cornstarch mixed with 1/4 cup cold water but it isn't necessary.

  6. I made it with the Chicken stock recipe provided by Clairelane. I couldn't find it in the food list so picked the closest. I added no salt and removed all the fat. So, the sodium level showing up in the analyzer is kinda high. Also, I baked my pumpkin instead of boiling it. Don't know if that changes the calories.
