Linda's Chocolate Pumpkin Muffins Recipe

Makes 20 servings


Pumpkin muffins with a hint of chocolate

Ingredients
2/3 cup olive oil
1/2 cup egg substitute
1/4 cup water
1 1/3 cup pumpkin, canned
1 1/2 cup sugar
1 cup oats
3/4 cup whole wheat flour
3/4 cup white flour
1 1/2 tsp baking soda
1 tsp cinnamon
78 grams cocoa powder (1/2 cup)
Directions
  1. Combine all dry ingredients

  2. Add moist ingredients

  3. Spray muffin tin with Pam

  4. Bake at 350 degrees for 20 to 25 minutes

  5. Makes 20 medium muffins
