Morracan eggplant

Makes 9 servings

1/2 c serving of eggplant salad; next time use less (maybe 1/2) the vinegar and lemon

Ingredients
2 eggplants
1 T olive oil
1 t salt
1 small tomato
1/8 t cumin
1/4 t hot red pepper
1 T lemon juice
2 T red wine vinegar
1 clove garlic
1 1/2 t paprika
Directions
  1. boil eggplant

  2. cook tomato in olive oil

  3. mix both together and add remaining ingred

  4. cook on med 10 min

  5. cook on low 1/2 hr
