Linda's Pumpkin-Apple Muffins Recipe

Pumpkin muffins with apple

Ingredients
2 medium apples
2/3 cup olive oil
1/2 cup egg substitute
1/4 cup water
1 1/3 cup pumpkin, canned
1 1/2 cup sugar
1 cup oats
3/4 cup whole wheat flour
3/4 cup white flour
1 1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
Directions
  1. Peel, core and chop apples

  2. Combine all dry ingredients

  3. Add moist ingredients and apple

  4. Spray muffin tin with Pam

  5. Bake at 350 degrees for 20 to 25 minutes

  6. Makes 24 medium muffins
