Pumpkin muffins with apple
| 2 | medium apples |
| 2/3 | cup olive oil |
| 1/2 | cup egg substitute |
| 1/4 | cup water |
| 1 1/3 | cup pumpkin, canned |
| 1 1/2 | cup sugar |
| 1 | cup oats |
| 3/4 | cup whole wheat flour |
| 3/4 | cup white flour |
| 1 1/2 | tsp baking soda |
| 1 | tsp cinnamon |
| 1/2 | tsp nutmeg |
| 1/2 | tsp ginger |
- Peel, core and chop apples
- Combine all dry ingredients
- Add moist ingredients and apple
- Spray muffin tin with Pam
- Bake at 350 degrees for 20 to 25 minutes
- Makes 24 medium muffins
