Wild Rice Soup--Lund's/Byerly's Recipe

Makes 6 servings

YUMMY

Ingredients
6 tbsp butter
1 tbsp minced onion
1/2 cup flour
3 cups chicken broth
3/4 cups wild rice (2 cups cooked)
1/2 cup carrots, grated
1/3 cup ham, minced
3 tbsp almonds, slivered
1/2 tsp salt
1 cup milk
Directions
  1. In large saucepan melt butter, saute onion until tender. Blend in four, gradually add broth. Cook, stirring constantly, until mixture comes to a boil. Boil and stir 1 minute. Stir in rice, carrots, ham, almonds and salt. Simmer about 5 minutes. Blend in milk. Heat to serving temperature. Garnish with snipped parsley or chives.
