Kung Pao Chicken Recipe

Makes 4 servings


Add rice

Ingredients
1 tbsp canola oil
4 cups broccoli florets
1 tbsp ground ginger
2 tbsp water
1/2 tsp crushed red pepper
1 pound chicken breasts, skinless, boneless, sliced
1/2 cup chicken broth
2 tbsp hoisin sauce
2 tbsp vinegar
2 tbsp soy sauce
1 tsp cornstarch
4 garlic cloves, mince
1 cup mushrooms, sliced
Directions
  1. Heast 1 tsp oil in large skillet over med high heat.

  2. Add broccoli and mushrooms and 2 tsp ginger; saute 1 min. Add water. Cover, cook 2 min. or until broccoli is crisp tender. Remove from pan, keep warm.

  3. Heat remaining 2 tsp oil in pan; add remaining 1 tsp ginger, crushed red pepper, and chicken (sliced in 1/4 in strips). Cook 4 min or til chicken is lightly browned, stirring frrequently.

  4. Combine broth, and next 5 ingred.s - thru garlic - in small bowl and stir with whisk. Add broth to pan, cook 1 in or til thickens, stirring constantly.

  5. Add broccoli and mushrooms -- toss to coat.

  6. Serve over rice.

  7. Opt: sprinkle w/ peanuts.
