Add rice
| 1 | tbsp canola oil |
| 4 | cups broccoli florets |
| 1 | tbsp ground ginger |
| 2 | tbsp water |
| 1/2 | tsp crushed red pepper |
| 1 | pound chicken breasts, skinless, boneless, sliced |
| 1/2 | cup chicken broth |
| 2 | tbsp hoisin sauce |
| 2 | tbsp vinegar |
| 2 | tbsp soy sauce |
| 1 | tsp cornstarch |
| 4 | garlic cloves, mince |
| 1 | cup mushrooms, sliced |
- Heast 1 tsp oil in large skillet over med high heat.
- Add broccoli and mushrooms and 2 tsp ginger; saute 1 min. Add water. Cover, cook 2 min. or until broccoli is crisp tender. Remove from pan, keep warm.
- Heat remaining 2 tsp oil in pan; add remaining 1 tsp ginger, crushed red pepper, and chicken (sliced in 1/4 in strips). Cook 4 min or til chicken is lightly browned, stirring frrequently.
- Combine broth, and next 5 ingred.s - thru garlic - in small bowl and stir with whisk. Add broth to pan, cook 1 in or til thickens, stirring constantly.
- Add broccoli and mushrooms -- toss to coat.
- Serve over rice.
- Opt: sprinkle w/ peanuts.
