Nice way to use left over sweet potatoes

Ingredients

tblsp flour |
| 1 |
tblsp margarine |
| 1 1/2 |
cups chicken broth |
| 1 |
tblsp light brown sugar |
| 1 1/2 |
cups cooked sweet potatoes |
| 1/4 |
tsp ginger |
| 1/8 |
tsp cinnamon |
| 1/8 |
tsp nutmeg |
| 1 |
cup milk |
Directions
- In blender puree sweet potatoes.
- In a heavy saucepan, over medium-low heat, cook the flour and margarine, stirring constantly until roux achieves a light caramel color. Add the broth and brown sugar, bring to a boil, then lower to a simmer. Stir in sweet potatoes and spices, bring to a boil again and cook for 5 minutes more. Add the milk and heat. Season with salt and pepper, ladle into warm soup bowls and serve.
