Sweet Potato Soup

Makes 4 servings

Nice way to use left over sweet potatoes

Ingredients
1 tblsp flour
1 tblsp margarine
1 1/2 cups chicken broth
1 tblsp light brown sugar
1 1/2 cups cooked sweet potatoes
1/4 tsp ginger
1/8 tsp cinnamon
1/8 tsp nutmeg
1 cup milk
Directions
  1. In blender puree sweet potatoes.

  2. In a heavy saucepan, over medium-low heat, cook the flour and margarine, stirring constantly until roux achieves a light caramel color. Add the broth and brown sugar, bring to a boil, then lower to a simmer. Stir in sweet potatoes and spices, bring to a boil again and cook for 5 minutes more. Add the milk and heat. Season with salt and pepper, ladle into warm soup bowls and serve.
