I was tired of lettuce today and mixed this up - it was amazing. I'll also say that quite a bit of dressing was left, so it's even lower-cal than it looks.

Ingredients

radishes |
| 1/4 |
large green pepper |
| 1 |
tomato, roma |
| 1/4 |
small onion |
| 1 |
oz neufchatel cheese |
| 2 |
cloves garlic, roasted |
| 1 |
tablespoon black pepper |
| 1/4 |
teaspoon salt |
| 1 |
teaspoon 2% milk |
| 5 |
small olives |
Directions
- Chop all veggies into bite-sized pieces.
- Mash the garlic in with the cheese until it's pretty consistently blended.
- Thin with milk, if desired.
- Add salt, pepper, and any fresh herbs of your choice.
- Pour dressing over veggies, and enjoy!
