Cheesy Potato Soup
| 2 | large potatoes, diced |
| 1/2 | cup milk |
| 2 | cans (24 oz) chicken broth |
| 5 | slices (95 g) american cheese |
| 1/4 | onion, diced |
| 2 | tbsp flour |
- In medium sized pot, add potatoes, onion, and chicken broth (add water to cover potatoes if needed).
- Bring to a boil.
- Mix together milk and flour until flour is disolved. Add flour/milk mix to potatoes.
- Simmer over medium heat as soup thickens for 20 minutes.
- Add cheese slices to potatoes one at a time while stirring and allowing cheese to melt.
- Simmer over low heat for 5 minutes.
- Serve with bacon bits and shredded cheese if desired.
