Great side dish for any of your favorite Mexcan meals! The serving size on this recipe is 1/2 cup.
This rice will come out real fluffy. If you like your rice a little more firm, reduce water by 1/2 cup.

Ingredients

cups rice |
| 3 1/2 |
cup water |
| 3 |
garlic cloves, chopped |
| 1/4 |
onion, chopped |
| 3 |
tbspn light olive oil |
| 8 |
ounce tomato sauce |
| 1/2 |
tspn salt |
Directions
- In a medium sized pan, at medium heat, add olive oil, rice, garlic and onion. Stir until rice is lightly browned.
- Add tomato sauce, water and salt.
- Stir frequently until water boils.
- Put lid on pan and simmer for 20 minutes.
- Stir rice again and simmer for 5 more minutes.
- Turn stove off and let sit for 10 minutes.
- Serve and enjoy!
