Diana's Spanish rice

Makes 12 servings

Great side dish for any of your favorite Mexcan meals! The serving size on this recipe is 1/2 cup. This rice will come out real fluffy. If you like your rice a little more firm, reduce water by 1/2 cup.

Ingredients
2 cups rice
3 1/2 cup water
3 garlic cloves, chopped
1/4 onion, chopped
3 tbspn light olive oil
8 ounce tomato sauce
1/2 tspn salt
Directions
  1. In a medium sized pan, at medium heat, add olive oil, rice, garlic and onion. Stir until rice is lightly browned.

  2. Add tomato sauce, water and salt.

  3. Stir frequently until water boils.

  4. Put lid on pan and simmer for 20 minutes.

  5. Stir rice again and simmer for 5 more minutes.

  6. Turn stove off and let sit for 10 minutes.

  7. Serve and enjoy!
