Waldorffy Salad w/Chicken
| 1 1/2 | lbs chicken breast, poached |
| 3 | large apples, diced |
| 4 | stalks celery, diced |
| 1/2 | cup cranberries, dried |
| 2 | oz cream cheese |
| 4 | oz yogurt, lowfat |
| 1/2 | lb green beans, blanched |
- poach chicken breasts in chicken broth; reserve broth for another use
- Cool and cube chicken
- combine cream cheese (neufchatel) w/yogurt in blender and mix until smooth, adding lowfat milk as needed to achieve pouring consistency
- blanch and shock green beans
- combine chicken, apples, celery and cranberries with dressing
- Serve on a bed of lettuce, garnish with green beans
