spinach and chickpea stew

Makes 4 servings

Serve this dish over rice

Ingredients
15 ounce stewed tomatoes
1 tsp paprika
14 ounce spinach
15 ounce chickpeas
1/2 tsp salt
Directions
  1. In saucepan over medium high heat, combine the tomatoes and paprika and bring to boil. Boil 1 minute. Add the spinach, cover and cook until the spinach wilts. 3-4 minutes. Stir in the chickpeas and salt. cover reduce the heat, and cook until the spinach is just tender and the flavors are blended.
