Mom's Recipe
| 2 | cups sugar |
| 1 1/4 | cups vegetable oil |
| 5 | eggs |
| 2 | cups flour |
| 1 | tsp salt |
| 1 | tsp cinnamon |
| 1 | tsp nutmeg |
| 1 | tsp baking soda |
| 2 | cups pumpkin |
| 6 | ounces coconut cream pie filling |
- Combine sugar, oil, and eggs in a large bowl
- Sift together flour, salt, cinnamon, nutmeg, and soda and add to above
- Add pumpkin and cream pie filling
- Spoon into muffin tin
- Bake at 350 degrees for 40-45 minutes
