low fat, low cal tasty and pretty soup

Ingredients
| 1 |
cup yellow onion |
| 1 |
clove garlic, minced |
| 1 |
cup celery, chopped |
| 78 |
grams split peas (3/4 cups dry) |
| 1 |
tbs bay leaves (2 whole) |
| 12 |
cups water (or broth) |
| 2 |
zucchini, (chopped) |
| 3 |
cups frozen broccoli |
| 3 |
cups frozen spinach |
| 60 |
grams instant potato flakes (1cup) |
Directions
- boil first 5 ingredients in 1/2 of the water for about an hour
- add frozen veggies and the rest of water and boil until all are tender and soup has reduced
- remove from heat and puree in blender in small batches
- stir in potatoes and season to taste
