Ingredients

cup garbanzo beans |
| 1 |
medium onion |
| 1 |
medium potato |
| 1/2 |
teaspoon ground cumin |
| 1/8 |
teaspoon cayenne pepper |
| 1 |
tablespoon lemon juice |
Directions
- Put chickpeas, chopped onion and 4 cups of water into a pot and bring to the boil.
- Cover partially, turn heat to low and simmer for 1 hour.
- Cube and add the potato, spices and another 1/2 cup of water.
- Bring back to the boil, then reduce the heat and simmer on low for 1 1/2 hours.
- Stir in the lemon juice, serve with desired amounts of salt and pepper.
- Optional: Garnish each bowl with fresh parsley.
