| 2 | Egg Whites |
| 1/4 | tsp Cream of Tartar |
| 3 | tbsp Low Fat Soy Flour |
| 2 | tbsp Lemon Juice |
| 40 | g Raspberries |
- place 10 raspberries in the bottom of 2 rammakins
- whip egg whites to soft peaks with vanilla, lemon juice and lemon zest
- sift flour and sugar into a bowl
- add slowly to egg white mixture and fold in with a rubber spatula untill combine
- spoon into rammakins ontop of raspberries
- place in bamboo steamer for 15-20 minutes
- let cool untill luke warm
- run a knife around the edges of the rammakin and flip custard out onto a plate
- garnish and serve
