Flavored Couscous

Ingredients
2 cups couscous
6 tbsp olive oil
1/2 c parsley
1/2 c mint
2 tbsp lemon juice
1/2 c pine nuts
2 tomatos
1/2 c scallions
3 c vegtable broth
2 garlic cloves
1 pepper jalapeno
Directions
  1. Heat oil

  2. Add scallions, garlic, and broth

  3. Bring to a boil

  4. Remove from heat and add couscous

  5. Let sit 5 minutes

  6. Add remaining ingredients
