Bran Mufins
| 2 | cups wheat bran |
| 5 | oz. oat bran |
| 1 | cup whole wheat flour |
| 2 | tsp. baking soda |
| 1 | tsp. baking powder |
| 1/2 | tsp. salt |
| 2 | large eggs |
| 2/3 | cup whole milk |
| 2/3 | cup yogurt,plain,whole |
| 1/3 | cup applesauce |
| 3 | tbsp. olive oil |
| 1/3 | cup molasses |
| 1/3 | cup honey |
| 1 | tsp. vanilla extract |
| 2 | tsp. cinnamon |
| 2 | cups frozen blueberries |
Combine wheat bran, oat bran, whole wheat flour,baking soda,baking powder and salt in a large bowl and set aside. Combine eggs,milk,yogurt, olive oil,molasses, applesauce and honey in a small bowl and mix well. Pour wet ingredients into dry ingredients and mix with a rubber spatula until just combined.Fold in blueberries. Generously fill muffin cups with batter.Cook in a 350 oven for about 20 to 25 minutes. Carefully remove from pan and serve warm or let cool on wire rack.Categories
