| 1 1/2 | cups lentils |
| 1 | cup onion |
| 1/4 | cup olive oil |
| 1 | cup parsley |
| 1/4 | cup lemon juice |
| 2 | cups tomatoes |
Cook lentils and chopped onion to desired texture and chill. Chop parsley and tomatoes and toss in with olive oil and lemon juice. Salt and pepper if desired. Keep chilled.Categories
