Lentil Salad Recipe

Cold lentil salad with chopped parsley and tomatoes.

Ingredients
1 1/2 cups lentils
1 cup onion
1/4 cup olive oil
1 cup parsley
1/4 cup lemon juice
2 cups tomatoes
Directions
Cook lentils and chopped onion to desired texture and chill. Chop parsley and tomatoes and toss in with olive oil and lemon juice. Salt and pepper if desired. Keep chilled.
