Creamy Cucumber Tomato Salad

Makes 10 servings

Refreshing and light side salad, perfect for hot summer days

Ingredients
1 cup fat-free sour cream
2 T lemon juice
2 teaspoon sugar
1/2 teaspoon dried dill
2 cucumbers, thinly sliced
1/2 red onion, thinly sliced
2 large tomatoes, chopped
Directions
  1. Combine sliced cucumbers, onions and tomatoes in large bowl.

  2. Stir together sour cream, lemon juice (may substitute white vinegar), sugar and dill. If desired, add a teaspoon of salt and a dash of pepper.

  3. Add mixture to cucumbers, onions and tomatoes, toss to coat.

  4. Cover and chill for at least 2 hours. Stir before serving.
