delicious...these have a LOT of chocolate chips in them...you don't have to use this many and they'll still taste good. sometimes i use a tsp or so of cocoa powder too
| 1/2 | cup skim milk |
| 1/2 | cup water |
| 2 | tbsp vinegar |
| 1 1/2 | cup bran flakes |
| 1 | cup flour |
| 1 | tsp baking soda |
| 1 | tsp baking powder |
| 1/2 | tsp ground cinnamon |
| 1/4 | cup brown sugar |
| 1 | (large) banana |
| 3 1/2 | egg whites |
| 1/2 | cup unsweetened applesauce |
| 2/3 | cup chocolate chips |
- Combine milk, water and vinegar.
- Mix in all bran. Let sit.
- Mix together all dry ingredients in separate bowl.
- Add 1 mashed banana, 3 egg whites and applesauce to bran mixture.
- Add dry ingredients to bran mixture and mix with spoon.
- Fold in chocolate chips.
- Spritz muffin tins with Pam
- Bake at 375º for 21-25 minutes.
