| 1 | medium eggplant, peeled and sliced |
| 1/4 | cup soy flour |
| 1/4 | cup brown rice flour |
| 2 | tablespoons olive oil |
| 8 | oz tomato sauce, no salt |
| 1/4 | cup grated cheddar cheese |
Heat oil in skillet. Dip eggplant slices in water and dredge lightly in flours. Fry and remove. When all is fried, layer slices, tomato sauce and cheese. Done.Categories
