The ultimate comfort food! Made in the crockpot.
| 16 | ounces sole fillet |
| 2 | tbsp cornstarch |
| 1 | cup canned corn, drained |
| 1 | cup frozen peas, defrosted |
| 1/2 | cup cream cheese |
| 2/3 | cup skim milk |
| 1/4 | cup bread crumbs, whole wheat |
| 1/2 | cup grated cheddar cheese |
| 1 | salt and pepper to taste |
- Cut the sole (or other white fish) into bite-size pieces and toss with cornstarch.
- Add the corn and peas and mix together well.
- In a separate bowl, blend the cream cheese and milk. Season with salt and pepper.
- Pour over fish mixture. Spoon fish mixture into ceramic pot and cook on high for 2 hours.
- Combine the bread crumbs and grated cheese. Spoon over fish mixture and place the crock under a moderate broiler for 5 minutes.
