Healthy Tomato and Basil soup

Makes 4 servings

75 cals a portion and full of fibre

Ingredients
220 g tomatoes, tinned
250 ml tomatoes, seived
1 garlic clove, crushed
1 leek, chopped finely
2 carrots, grated
1 pint of water
1 tablespoon olive oil
1/2 cup basil, fresh
Directions
  1. Heat oil in pan add leeks, carrots and garlic and cook until soft, add the tinned tomatoes, seived tomatoes and water and simmer for 25 minutes.

  2. Let soup cool down and add the basil and blend.

  3. Serve with % fat greek yohurt
