4 cups water
1 cup French green lentils, rinsed
1 small bunch flat-leaf parsely, finely chopped
6 scallions, finely chopped
1 sweet red pepper, chopped
1 yellow pepper, chopped
3 tablespoons unrefined toasted sesame oil
3 tablespoons brown rice vinegar
juice of 1 lemon or lime
2 tablespoons tamari or Bragg
1/2 teaspoon crushed red pepper
1 teaspoon salt
1/2 teaspoon fresh ground black pepper

Directions
- Bring the water and lentils to a boil in a medium pot.
- Reduce the heat, cover, and simmer for 45 minutes.
- Drain the water and transfer the lentils to a serving bowl.
- Let cool.
- Combine with the vegetables, seasonings, and spices and toss gently.
- Serve at room temperature
