Cream of Mushroom Soup for Recipes

Use in recipes that call for one can of cream soup.

Ingredients
8 small mushrooms - chopped
1 stalk celery - chopped
2 tablespoons onion - chopped
2 tablespoons butter
1/2 cup chicken broth
3/4 cup heavy cream
1 Salt and pepper
Directions
  1. In a medium skillet, sauté the mushrooms, celery and onion in the

  2. butter until soft.

  3. Add the broth and cook on medium-high heat until reduced by half.

  4. Stir in the cream; bring to boil and cook until reduced slightly,

  5. stirring frequently. Season to taste.
