Warming Winter Soup

Makes 2 servings

Low fat lunch for a cold winter day

Ingredients
1 tbsp light olive oil
1 onion, diced
1 leek, diced
1 carrot, diced
1 cup winter squash, diced
1 potato, sweet, diced
300 ml chicken bouillon
Directions
  1. sweat the onion and leek in the oil until soft

  2. add the carrot, potato and squash, fry for a couple of mins

  3. add the bouillon

  4. bring to the boil

  5. cover and simmer until all the veggies are soft

  6. allow to cool slightly

  7. blend until smooth

  8. season to taste
