Low fat lunch for a cold winter day

Ingredients
| 1 |
tbsp light olive oil |
| 1 |
onion, diced |
| 1 |
leek, diced |
| 1 |
carrot, diced |
| 1 |
cup winter squash, diced |
| 1 |
potato, sweet, diced |
| 300 |
ml chicken bouillon |
Directions
- sweat the onion and leek in the oil until soft
- add the carrot, potato and squash, fry for a couple of mins
- add the bouillon
- bring to the boil
- cover and simmer until all the veggies are soft
- allow to cool slightly
- blend until smooth
- season to taste
