Brown Rice Pilaf

Makes 6 servings

An easy side dish

Ingredients
1 medium onion
1 tbsp olive oil
1 pinch salt
1 cup brown rice
1/4 cup white wine (optional)
2 cups chicken broth
Directions
  1. Finely chop onion

  2. Heat Olive oil over medium heat

  3. Add onion to olive oil with pinch of salt and cook until softened, 2-3 minutes

  4. Stir in brown rice and cook for a minute or two

  5. Add optional white wine

  6. Add chicken broth. Stir and cook covered over low heat until rice absorbs liquid
