An easy side dish

Ingredients
| 1 |
medium onion |
| 1 |
tbsp olive oil |
| 1 |
pinch salt |
| 1 |
cup brown rice |
| 1/4 |
cup white wine (optional) |
| 2 |
cups chicken broth |
Directions
- Finely chop onion
- Heat Olive oil over medium heat
- Add onion to olive oil with pinch of salt and cook until softened, 2-3 minutes
- Stir in brown rice and cook for a minute or two
- Add optional white wine
- Add chicken broth. Stir and cook covered over low heat until rice absorbs liquid
