Yum! You can probably do this with any veggies you think would taste good together!

Ingredients
| 1 |
tbsp extra virgin olive oil |
| 1 |
potato, diced |
| 120 |
g asparagus, approx 8 spears, diced |
| 4 |
ounces artichoke hearts, peeled apart |
| 1 |
tbsp Parmesan cheese, reduced fat |
| 1 |
salt, pepper, garlic powder to taste |
Directions
- In microwave safe bowl, heat potato and a bit of water in microwave until they seem tender. Meanwhile, heat oil in pan and add seasoning, to taste. When potato is done, add parmesan cheese to oil mixture, letting the parm become slightly browned.
- Add potatoes - the parmesan will stick to the potatoes!
- Add additional veggies and cook until heated throughout. (Asparagus should still be crunchy, artichokes will be soft, and potatoes will be somewhere in between!)
