Ingredients

tbsp Olive Oil |

Carrot - chopped |
| 1 |
cup Onion - chopped |
| 1 |
pound Boneless skinless chicken breast - cubed |

Tomatoes - Diced - Can |
| 1/2 |
tsp. Basil |
| 1/2 |
tsp. Oregano |
| 1 |
clove garlic |
| 4 |
tsp. grated parmesan cheese |
| 1/2 |
tsp. salt |
| 1/4 |
tsp. pepper |
Directions
- Heat oil in skillet.
- saute vegetables until softened (about 10 minutes).
- Add chicken; cook until no longer pink.
- Stir in remaining ingredients and cover.
- Simmer until flavors blend (about 10 minutes)
- Serve over pasta (extra calories!) or with green salad or steamed vegetables.
