Spicy lentils to accompany fish, sausages, meat

Ingredients

g lentils, puy |
| 1 |
onion, shallot - slices |
| 1 |
baking potato - chopped in cubes |
| 1 |
clove garlic - crushed |
| 1/2 |
cup courgette - chopped into cubes |
| 1/2 |
cup sweet pepper - chopped into cubes |
| 10 |
ml olive oil |
| 1/2 |
teaspoon dried capsicum |
| 1 |
pint water |
Directions
- In deep sauce pan add olive oil and heat, add all the ingredients except for the lentils, fry until onion is soft, add lentils and capsicum (chilli flakes) and stir for a minute, add water and bring to boil, simmer for 30 minutes.
- Add seasoning last as adding salt during cooking releases sulphur which can cause wind.
