Makes 3 servings

Spicy lentils to accompany fish, sausages, meat

Ingredients
200 g lentils, puy
1 onion, shallot - slices
1 baking potato - chopped in cubes
1 clove garlic - crushed
1/2 cup courgette - chopped into cubes
1/2 cup sweet pepper - chopped into cubes
10 ml olive oil
1/2 teaspoon dried capsicum
1 pint water
Directions
  1. In deep sauce pan add olive oil and heat, add all the ingredients except for the lentils, fry until onion is soft, add lentils and capsicum (chilli flakes) and stir for a minute, add water and bring to boil, simmer for 30 minutes.

  2. Add seasoning last as adding salt during cooking releases sulphur which can cause wind.
