Very Easy Red Lentil soup

Makes 18 servings

hearty vegitarian soup

Ingredients
1 3/4 cups tomatoes, diced
8 cups water
2 1/2 cups red lentils
2 cups carrots, diced
3 cups potatoes, diced
1 tsp olive oil
1 cup onion, diced
1 tsp basil
1 tsp sage
Directions
  1. Saute onion in olive oil in large pot. When onion is golden, add water and boil. Add lentils, carrots, potatoes, tomatoes and seasonings. Simmer 45minutes. Makes 18 1 cup servings.
