Not very light, but good tomato basil soup
|
Ingredients
| 1/4 |
c unsalted butter |
| 1/4 |
c extra virgin olive oil |
| 1 |
onion |
| 3 |
lbs of tomatoes |
| 2 |
tbls brown sugar |
| 1 3/4 |
c chicken broth |
| 1/2 |
c basil |
| 1 |
tsp salt |
| 1 |
tsp pepper |
| 1/2 |
c heavy cream |
Directions
- Add the butter & olive oil in the pot over medium-high heat.
- Add onions and 1/4 tsp of salt and let cook for 5 minutes.
- Add just the tomatoes, without the juices and let it caramalize with the onions for 15 minutes.
- Add the tomato juice, brown sugar, basil and the chicken broth.
- Add pepper & salt to taste.
- Simmer for another 10-15 minutes.
- Using a blender, blend soup in 1/2
- pitcher increments. Strain liquid.
- Return contents to stove and add heavy cream. Bring to a boil and serve with a garnish of basil.
