Tomato Basil Soup

Makes 8 servings

Not very light, but good tomato basil soup

Ingredients
1/4 c unsalted butter
1/4 c extra virgin olive oil
1 onion
3 lbs of tomatoes
2 tbls brown sugar
1 3/4 c chicken broth
1/2 c basil
1 tsp salt
1 tsp pepper
1/2 c heavy cream
Directions
  1. Add the butter & olive oil in the pot over medium-high heat.

  2. Add onions and 1/4 tsp of salt and let cook for 5 minutes.

  3. Add just the tomatoes, without the juices and let it caramalize with the onions for 15 minutes.

  4. Add the tomato juice, brown sugar, basil and the chicken broth.

  5. Add pepper & salt to taste.

  6. Simmer for another 10-15 minutes.

  7. Using a blender, blend soup in 1/2

  8. pitcher increments. Strain liquid.

  9. Return contents to stove and add heavy cream. Bring to a boil and serve with a garnish of basil.
