Very easy to cook, quick, vegetarian & nutritious

Ingredients
1 eggplant
1/2 lb carrots
2 red peppers
5 small tomatoes
2 zucchini
5 cloves garlic
1 tbsp olive oil
Directions
  1. stir fry eggplant on a very high heat

  2. add all other vegetables and stir on the low heat

  3. add seasoning
