Salome's Eggplant Cheese Thing Recipe

Ingredients
1 1/2 lb eggplant
2 whole eggs
3 egg whites
1 tbsp onion powder
1 tsp garlic powder
30 mg salt
1 tbsp tomato paste
1 oz bell pepper
1 tsp olive oil
2 oz cheddar cheese
1 1/2 oz mozzarella cheese
Directions
  1. saute veg in olive oil.

  2. blend eggs and cheese and seasoning.

  3. pour over veg and bake.
