Mandarin Almond Meal Cake Recipe

Makes 20 servings


from Consuela - can be made with oranges

Ingredients
3/4 cup sugar
200 g almond meal
4 eggs
1 tsp baking powder
2 cups tangerine
Directions
  1. Place mandarins in a saucepan, cover with water and boil for 1 hour. Leave to cool.

  2. On a plate, cut mandarins open, remove pips and place pulp and skins into blender. Process until smooth. There should be just over a cup of pulp.

  3. Beat eggs and sugar until thick and fluffy.

  4. Add mandarin pulp, almonds and baking powder.

  5. Mix well and pour into a greased and lined 20cm cake tin.

  6. Bake in a moderate oven (190 C) for 1 hour.

  7. Cake will fall slightly in centre (mine didn't!)
