Golden Potato Salad

Makes 5 servings

1. COOK potatoes in boiling salted water about 10 min. until tender; drain and cool. 2. PLACE potatoes in bowl with remaining ingredients; toss to coat. 3. SEASON with salt and pepper to taste. Chill.

Ingredients
2 lbs. potatoes, cubed
1/3 cup Mustard
1/3 cup mayonnaise, fat free
1/3 cup fat free sour cream
2 eggs, hard cooked, chopped
1/2 cup celery, diced
2 tbsp. red onion, diced
2 tbsp. parsley, minced
Directions
