delicious potato soup I use 4 cups of unsweetened Silk soymilk organic. It is only 80 calories per cup but I couldn't get this site to use my tagged food in a recipie so I calculated the differences in soymilk calories.
| 2 | tablespoons butter |
| 1 | small onion, diced |
| 2 | stalks celery, diced |
| 2 | cloves garlic, minced |
| 2 | tablespoons all-purpose flour |
| 8 | medium russet potatoes, peeled and cubed |
| 3 | cups soymilk |
| 2 | bouillon cubes |
| 1 | teaspoon salt |
| 1/4 | teaspoon pepper |
| 1 | cup water |
In a crock on high,melt the butter and saute the onion, celery and garlic until tender. Whisk in the flour and cook for about 2 minutes. Add the potatoes, soymilk and dissolved bouillon cubes, Cook about 2 hours or until the potatoes are very soft and some of them have begun to dissolve into mush.
