Vegetarian Potato Soup Recipe

Makes 6 servings


delicious potato soup I use 4 cups of unsweetened Silk soymilk organic. It is only 80 calories per cup but I couldn't get this site to use my tagged food in a recipie so I calculated the differences in soymilk calories.

Ingredients
2 tablespoons butter
1 small onion, diced
2 stalks celery, diced
2 cloves garlic, minced
2 tablespoons all-purpose flour
8 medium russet potatoes, peeled and cubed
3 cups soymilk
2 bouillon cubes
1 teaspoon salt
1/4 teaspoon pepper
1 cup water
Directions
In a crock on high,melt the butter and saute the onion, celery and garlic until tender. Whisk in the flour and cook for about 2 minutes. Add the potatoes, soymilk and dissolved bouillon cubes, Cook about 2 hours or until the potatoes are very soft and some of them have begun to dissolve into mush. Add water to desired consistancy, salt, and pepper
