Sweet Potato, Red Pepper, Tofu, Broccoli, Onions, Brown Rice, Island Teriyaki

Ingredients

sweet potatoes, shredded |
| 1 |
medium red bell pepper, sliced |
| 14 |
ounces organic firm tofu |
| 3 |
medium stalks organic broccoli |
| 2 |
medium sweet onions |
| 2 |
tablespoons sunflower oil |
| 5 3/4 |
cups brown rice |
| 2/3 |
cup teriyaki sauce |
Directions
- Cook onions over medium heat until they begin to brown.
- In separate pan, cook Tofu on med-high heat w/ a little of the teriyaki sauce.
- Once the tofu is browned and crispy, combine with onions and the rest of the ingredients.
- Add rice when ready.
