A chicken dish that is great served over rice
| 3 | lbs. chicken breast, cooked and shredded into pieces |
| 1 | large onion, chopped |
| 3 | large carrots, sliced and slightly steamed |
| 8 | oz. mushrooms, sliced |
| 1 | T butter |
| 2 | T cornstarch |
| 3 | cups chicken broth |
| 5 | oz. green olives |
Saute the onion and and mushroom in the butter. Add the broth. Dissolved cornstarch into the broth, add and stir until thickened. Add cooked carrots, chicken and olives and heat until warmed through. Season with salt and pepper to taste.Categories
